Located outside of Charles Town, West Virginia, the restaurant is situated on a sprawling 30-acre piece of land that was once owned by George Washington. The Restaurant strives to create and serve extraordinary cuisine in West Virginia. Chef Timothy Rampey creates delicious plates with resources right from the Blue Ridge. Working with local farms and regional purveyors, Chef Rampey ensures the freshness of food to make the meals the best tasting they can be. Meals change daily so they can be sure to use every resource they have and find the perfect taste for everyone.

Owned by Chris and Carissa Zanella, the couple purchased the property in 2004 and have carried on its history of providing special experiences in an unforgettable historical setting.

Why did you choose the Hillbrook property?
As soon as you drive down the driveway, you find a storybook setting.  The old English Tudor captivates you as it cascades down the hillside.  I knew it was the perfect home for our creative minds. My husband maintains the building, oversees the maintenance and grounds, and works behind the scenes in the business. I personally handle more of the front of the house — working directly with staff, visiting with guests, and helping my team with events and every day operations.

Fun history of the former name, “Redbook Restaurant”
There has been a restaurant located on the Hillbrook property since 1985. Three years ago, we named it the “Redbook Restaurant” because we record our daily menus in a little red book in the kitchen, allowing us to look up the menus of our repeat guests. Often times you will see guests reading from the display of old red books in our main dining room.
