Get to know Chef Nick Green

Nick Green graduated with honors from Skidmore College in 2008 and went on to cook and manage some of the most noted kitchens in the Northwest, including Café Juanita and The Willows Inn on Lummi Island. While at the Willows, the restaurant was lauded to international success winning two James Beard awards and earning top accolades on the most respected restaurant lists in the country.

Since 2018, Nick has been working for Noble House Hotels, a boutique hotel group based out of Seattle and has managed F&B operations at a variety of properties around the country spending time in Texas, Florida and California.

Most recently, he was the chef at L’Auberge Del Mar, an iconic 121-room boutique hotel in Del Mar, CA. He was was part of the renovation and re-concepting of the F&B program at the hotel, including the launch of Adelaide, the hotel’s flagship restaurant.

Nick has spent time cooking in Southern Italy, Kyoto and throughout Mexico. He is passionate about deep rooted food traditions from around the world and loves travel, art and dive bars.
